To my favourite food and best friend The Avocado I owe an apology for the hundreds of avocado stones I have wastefully tossed away in ignorance of their incredible treasures. Apparently the stone is extremely nutritious, even more so than the lovely green flesh. After reading the article I've copied below I tried it, they taste bitter so I suggest grating the stone with a cheese grater and mixing into salads, rice, pasta etc.
