Avocado Seeds- Superfoods For Your Health

To my favourite food and best friend The Avocado I owe an apology for the hundreds of avocado stones I have wastefully tossed away in ignorance of their incredible treasures.  Apparently the stone is extremely nutritious, even more so than the lovely green flesh.  After reading the article I've copied below I tried it, they taste bitter so I suggest grating the stone with a cheese grater and mixing into salads, rice, pasta etc.

In fact, the seeds contain more antioxidants than the avocado fruity fleshes and most fruits, vegetables and healing teas do. The seeds, even have the ability to provide the body with more soluble fiber than any other food available to you at a whole food market, but the benefits do not stop there.

  • Avocado seeds contain nourishing oil that is rich in antioxidants. In fact, 70% of the antioxidants are found in the seed alone and the other 30% are actually in the flesh and skin. HaveAnAvocado

I've said it before and I'll say it again, the avocado is the greatest edible substance known to man, or at least to one man here it is.  As mentioned in the linked post the key is in the timing of catching the ripeness window and I have now invented a system to ensure I am never left staring for days on end, being teased by a gastronomically provocative avocado.  The system is simple and best explained by the following image.....

the avocado

avocados on my window sill-
still not ripe,
when can i eat you?
i respect the avocado.  the flesh of a perfectly ripe avocado is a truly wonderful eating experience but its allure is made so much more intriguing by its mysterious reluctance to give any indication of when it will be ready to eat.  when i buy my avocados they're usually all hard and not so great for eating quite yet so i put them to one side for a couple of days in the kitchen until they're nice and ripe.  the avocado however has its own way of doing things, it says to itself "well i might be ripe in a couple of days but if i feel like it i'll make you wait a week", if on this basis you decide to leave them for a week it'll sneakily ripen while you're not looking and then be over ripe, brown and gungy just when you fancy eating it.  a frustratingly awkward fruit but one that you can't help but admire and respect because apart from when it's being eaten the avocado calls the shots.
